Old Fashion Banana Cake frosted with Maple Swiss Meringue Buttercream

**My Mom was telling me she remembered a cake my Aunt made years ago that was the best cake she'd had. It was a banana layered cake with a meringue frosting. I found this recipe online...it sounds like the one she was talking about.

Banana Cake:

Ingredients -

■2 1/2 cups all-purpose flour
■1 tablespoon baking soda
■1 pinch salt
■1/2 cup unsalted butter
■1 cup white sugar
■3/4 cup light brown sugar
■2 eggs
■4 ripe bananas, mashed
■2/3 cup buttermilk

1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 – 8 inch round pans. In a small bowl, whisk together flour, soda and salt; set aside.

2.In a large bowl, cream butter, white sugar and brown sugar until light and fluffy. Beat in eggs, one at a time. Mix in the bananas. Add flour mixture alternately with the buttermilk to the creamed mixture. Pour batter into the prepared pans.

3.Bake in the preheated oven for 30 minutes. Remove from oven, and place on a damp tea towel to cool.

I was blessed to host wonderful Family Reunion for My husbands side

Reunion in honor of Timothy & Anna Urshan...decendents
...we cooked Anna's recipes







We celebrated their story... ....the Journey from Iran to the USA on the 4th of July. They fled their homeland & 2nd homeland-they lost family & possessions. Their family & their people the Assyrians slaudered, running or rounded up in refugee camps without nourishment... diseases rampit...barely survived the masscres & death marches...but when our elders(the 3 remaining siblings out of 7), looked at the remnant of their family this week...they were pleased & full of love...the next generation of their kids and grands have flourished in the USA...they felt their life counted and their suffering was behind them to bring this to this place. A good place. They gave the kids their blessings & have lived a life of hard work to provide a great life for their family.

My husbands people are Assyrian...they are facing extinction from the many genocides & mascres that have happened to them from their moslem neighbors...they are similar to the Armenians. They have always been peaceful people that have lived side by side with the tribes around them. But, have been targest for those who want to stamp out Christianity in the middle east. They are indiginous to their area(Iraq/Iran)-much like our American Indians were the longest existing here in US...it's the reason we are having a family reunion....our children must never forget the sacrifices of their elders to give them freedom and a better life in America.
